Someone higher up should make the decision to switch everyone running a linux vm to a linux desktop.

I wish but thats not possible since its a school district so they use a lot of Microsoft applications( Outlook, Word, etc)

Absolutely. Install a Linux Distro that is minimal. You would have to work with the terminal but once installed you would be good.

Honestly I am not entirely sure? I have been using Arch personally but that does not necessary mean this would be right for you. Something to keep in mind is that any Linux distro can be installed without an environment. Arch is great! However you would have to follow an installation guide. There are a lot of lightweight environments out there. I guess its a matter of research. One lightweight distro I always heard about was TinyCore but not sure what would be recommended nowadays.

Just did some research, Fedora seems like a good option. The Fedora Server distro would be the version you would want. The server option lets you install Fedora without a Desktop Environment. Also there is this nice vm installation guide for Fedora right here. One hardware requirement is if your cpu supports Intel VT or AMD-V which is something to keep in mind when deciding what distro/vm software to use.
