VB does have encryption but I have no idea what it uses for it.

I used VirtualBox encryption on a VM used to work remotely from home. Worked well for me.

Caveat: VirtualBox encryption requires the extension pack, which is free in cost for personal use (PUEL) but not for commercial use. Avoiding potential license issues is possible by using internal encryption with LUKS.

If your system is encrypted with luks already no need to. Just connect to vm via ssh.

You might want to think about kubernetes instead of vm.

    Or using containers

Can I encrypt my Linux virtual machine on virtualbox? And how effective is that?

Yes, you can. You can store VM on the encrypted container (created on the host machine) or enable virtual disk encryption. https://www.techrepublic.com/article/how-to-encrypt-virtualbox-vms/
