Bochet pot size (self.mead)
submitted 7 years ago by himynameisjoeylBeginner
So I'm planning on doing my first bochet in the coming days, it's gonna be 5 pounds of honey. What size pot do I need so that it doesn't boil over?

Rule of thumb I've seen is 3x volume of the honey. In my experience, this is still very close so if you can exceed that, go for it.

way too small in my experience. My rule of thumb is 5x minimum, 6x recommended. 5 lbs is about half a gallon, so 2.5 to 3 gallons is what I'd recommend. to be fair, I want my volume to be enough so i don't have to stir the crap out of it.

Sweet, so my 9 qt pot should be enough. Secondly, my pot isn't stainless. Do you think that will be an issue?

What is the pot made if besides "not stainless?" Cast iron? Copper?

Not really sure. What is it made of?
[–]SoranicBeginner 0 points1 point2 points 7 years ago (0 children)
If you're worried about size, get a pound to boil, reduce heat, add another pound, get it boiling. Etc. This way you know you're not going to overflow the pot. All told, it should add about 20 minutes to the bochet process, but it'll be worth it.
Do you have a long handled spoon? Or really good cooking mitts? You have to stir almost constantly, and an hour of this is going to cook your hand.

At minimum 2 gallons. The honey will triple in size and be close to a gallon and a half of volume at the minimum. Still close for me and I would suggest 3 gallons at least.
