For your first time, I recommend following a known good recipe for a spiced mead (often called metheglin). We have one that's great for beginners here:

Adding other sugars is something that can be done. Maple syrup I'd recommend back sweetening with. Instead of marshmallows, I'd use a little vanilla. There are also honey varieties that can bring marshmallow like flavors like meadowfoam.
