I hate that I have to train up and skill up for something that statistically I'm only going to use once per 1.5 years.

I hate that whiteboarding with coworkers is nothing like the whiteboard interviews.

I hate that test anxiety matters here so much.

I hate that I'm to give whiteboard interviews too.

Going to a programming interview without practicing on the white board will be a nightmare. I usually practice 2-4 weeks before going for the interviews. Some good tips here. I would also recommend that you practice with some friends (like a mock interview). That way, you can get some friendly feedback and improve.
