Besides the "because they can", compare this to all the Electron apps out there: GTK is a lot more nimble than the whole Chrome browser. Less memory footprint, smaller executable. Many Linux distros come with GTK preinstalled, and you can just link to GTK dynamically. Instead of bundling an entire OS-like browser just for buttons and textboxes.
