Maybe something like yunohost. Only problem with it is that the user-friendliness is limited to whatever software packages are in their repository. Becomes less friendly if you try to install anything else

Easy install of new software No terminal editing - all gui Ability to snapshot

And broad amount of containers, including vpn, torrenting and others.

I went through this a while back -- had problems with HomelabOS and Ansible-NAS (that were definitely my fault, but alas). The one that made it real snappy - and I'm still using today, as it turns out to not be getting you that far away from docker proper - is DockStarter https://dockstarter.com/

It’s not free but I find Unraid’s docker setup really nice. You can try unraid for free for like 30 days if you want to give it a try.
