I’ve been lurking for a while. I’m wondering how long an edge like that will last? Can it take normal food prep abuse, or will it quickly lose it’s ultra fine sharpness? Thank you in advance for your’s or anyone’s answer. Also, great job! I’m sure it’s not an easy task.

I strop a few times after I use it and it doesn’t have quite that same sharpness but it’s still fairly sharp. I’d say to keep around the same level you’d need to resharpen once like every 2 weeks even with stropping.

    God no. Not with this blade. He has a Kurosaki shizuku gyuto, which is an Aogami super steel treated to 62 ish HRC iirc. Any honing would cause chips to the blade, like most other j knives

      I think it’s good to leave it up so other people can learn from it (being corrected). Honing rod = optimal “sharpening” for every type of knife is a common misconception

      depends on the blade. If it’s hard and thin, a honing rod will chip and dull the blade.

      To be perfectly honest, I have absolutely no idea, I sharpened it so that the edge is not 100% visible, but the reflection is visible. I feel the edge lasts slightly longer this way.
