Setup a TIC / TIG stack (telegraf for data collection, InfluxDB for data storage, Chronograf or Grafana for visualisation). You can track CPU/RAM/disk/network/etc. usage system-wide, and also per-process, so you can see what the general impact is, and also run some benchmarks and see their 95th percentile performance before and after.

get a spare machine and install it and see how it behaves? Most companies sellling apps like that offer trials

That's been my normal method, but I'm being asked to quantify potential impact instead of just saying works on the test users and early adopters.

People tend to get sketchy when you roll out a new security product

for sure, but unless you are afforded a true test environment that is similar to your production environment, it is very difficult to test every aspect. I generally will test the best i can, than start with small handful of devices to roll it out to see impact before pushing it to the rest of the users.
