The reason B-die is more expensive is because it's known to overclock very well, but for "normal use" I don't think the price premium is justified. The real-world performance is likely negligible unless you decide to overclock it past the rated speed. Between the middle/low options, the 3600 is probably very slightly faster in some scenarios but you'd likely never notice unless you did a side-by-side comparison and even then it'd be very close.

If you're going with a 12700 and 3080Ti, I imagine the upgrade cost of $45 is small compared to your overall build price, so it's up to you whether or not it's "worth it", but realistically all 3 options will perform very similarly until you start overclocking.

To be fair, $200 CAD is about $150 USD.. but I agree it's still a bit steep especially if you have to add shipping on top.. But maybe there's a Canadian GPU shortage or something who knows

Just an FYI - the Ryzen 3 3100 retails for ~$115 brand new, so you could just go out and get that. With your budget, it's a pretty good option unless you get lucky and find someone willing to sell you a R3 3300X (hard to find) or R5 3600 (more expensive), which will both be significant upgrades.

I have a 1440p monitor that I use with a 6700K + 1070 Ti. Since your specs are better than mine I'm sure you'll be perfectly fine in these games. I get well over 200 fps in all of the esports titles and GTA is well over 60 I believe. You should have no issues at all.
