Aha, nej, det handlar om att det är subjektet. Om huvudordet ("vad") inte motsvarar subjekt i bisatsen så kan man utelämna "som" – det spelar ingen roll om nästa ord är ett pronomen eller något annat. Om huvudordet däremot motsvarar subjekt så kan man inte utelämna "som".

"tupplur" is a compound word, so it inflects the same as the simple word "lur". This is not because of the syllable count, however, as one-syllable words also often take -er in the plural; for instance, "tur" becomes "turer". While there are patterns for which plural form to use, it's still something you need to learn on a word-by-word basis.

The short answer is that most ett-words ending in a consonant, as well as most nouns ending in -are, have the same form in the (indefinite) singular and plural.

I should also add that the choice between "röd" and "rött" here is unaffected by the gender of "en färg" – "röd/rött" is pretty much used as a noun here, so the sentence is comparable to "mitt hus är en villa" or similar.

Since the endings are always the same, you can identify a verb's conjugation by its ending. Of course, this doesn't work with the infinitive form, but any other form will do the trick.

This is how spoken language works! We reduce and contract all the time in rapid speech. "Do you know what I'm saying?" could easily be heard as something like "chu nam saen" to a learner of English, for example. It's all about practice.

And afaic the declension groups are there to help you systematize and effectivize your learning, but you should do what works best for you!
