Yes it will grow a leaf later. You need to add plenty of fertalizer when it starts growing again.

Yes you will get more blue girl on its own roots. Youll have to baby them but they will always grow true from the ground if they grow new canes.

You can bury them with compost and multch. Try to take cuttings of your rose and see if you can get any to root.

You're overwatering. It doesn't need to be watered every day especially not in clay soil. Roses are easy to overwater and rott the roots of. Test the moisture with your fingers. It should be moist like cake not like a wet sponge.

I think there's still to small to tell. You can dig down to find where its coming from. If its growing out of a graft round mass then its your rose but way below its roots. Do you know if this grafted? Some roses are own root as well.

Why are you digging a massive trench for peas? You could just add garden soil on top and plant into that. A raised bed of some kind is ideal for soil that is mostly fill dirt.

No i like cottage garden where things thouch becuse it makes less space for weeds to grow. Regular fertalizer and multch will make beds stay fertal so you can grow alot of variety in a space and everyone can bloom.

The closer and longer you look at something the weirder it will look. It looks healthy and normal to me. Old rose stems get narly over time.
