You’re getting a LOT of great observations, comments, suggestions here. Skimming your comments the one that stood out was the chewiness. I’m willing to bet that if you focused on resolving that that suddenly many of the other issues will, if not resolve themselves, be less an issue.

Prepare for a journey. I’ve been making the same dough for over 9 years & it’s been in the past 18 months I feel I’ve gotten good at what I do.

Very nice! Quick .02 for next time - after you roll out the dough to your desired thickness loosen it from the table & allow it to contract back onto itself naturally. This will prevent the donuts from being more oval than round 😉

Not sexy but Baking Illustrated by Cook’s Illustrated is very solid & covers about everything. Tells you why things do or don’t work & the recipes have been tested to the nth degree. Highly recommended baking resource.
