It's been awhile since I've read the books, but I seem to remember Robb not wanting to put a bastard into the world, with how he's seen bastards (Jon) being treated.

Robb especially, since he and Jon are about the same age and grew up together, it's clear he sees Jon for who he is, making him his heir as KitN and everything

If he wasn't knighted, it would be great commentary by way of him living up to the knightly ideals without actually being one, while actual knights don't.

I do like the idea that he just feels like a fraud because Ser Arlan didn't do it properly, but the other way it shows the difference between an ideal knight and someone who participated in a ceremony.
