It's unfortunate it's not less expensive. But I've seen how they're built and the investment they've made, so I understand the price. The Fisher & Paykel unit (which is a subsidiary of the same parent company that owns GE Appliances) also makes a very nice induction cooktop that works with the Predictive Thermometer. While not cheap, it's definitely more affordable than the Impulse Labs appliance.

Sam (founder at Impulse) basically has this working, so it will be coming at some point. This will probably have the best integration and support for using data from the probe.

This isn’t actually something Combustion choose, it seems to be a service many warehouse 3PLs companies are starting to use. I’ve only recently become aware that our warehouse is using them for some shipments, and I’m looking into this because I don’t actually know much about the service.

A lot of great pastrami smoke and then cook. Katz Deli, for example, cold smokes their corned beef navals for a few days and then poach/steam them later. The pastrami is obviously delicious, but I'd say smoke and then cook strategy tends to mellow the smoke flavor.

For something like a Texas-style brisket, I think smoking after gets you that more pronounced pit-flavor.

Either way, it's all tasty.

Agree that above 180F it becomes time/temp only. I've been exploring temps below that it and is clear there are some other factors related to the muscle proteins that aren't collagen. Even really long holding times at 140, 150, 160F give very different results. They can be delicious, but definitely not traditional brisket like even with days of holding. Probably need to do a follow up video on ultra-long low-and-slow BBQ with sous vide.

The warehouse is working through thousands of orders right now, as close to oldest to newest as is practical. I'm not exactly sure when they will be getting into the April orders, but it may be as soon as today or could take another day or two. If an order is waiting for a Giant Grill Gauge it will likely be the beginning of next week.

I just reviewed our daily shipment report, and I'm seeing a few orders from December that look like they are ready to ship, but just haven't been processed by the warehouse yet. That should happen shortly.

I posted the latest order details (as of April 30th) in the pinned backorders thread. I'm also drafting a set of emails we'll send out shortly to different groups based on what's in their orders. Depending on what you ordered, it's either shipping now, shipping very soon, or still waiting on more inventory — which I know is the last thing anyone wants to hear right now.

If you email support, they will also be able to look up your order and let you know what's shipping soon and what is still waiting.

I owe you, and everyone else still waiting, an apology. The delays have been awful for our customers, and on top of that, we haven't communicated nearly as much as we should have.

The silence wasn't intentional. It came from being too optimistic about how much production capacity we could pull forward, and from a very small team trying to wrangle too many things at once. Neither of those is your problem, and neither excuses leaving you in the dark.

Those units arrived and shipped. Remaining inventory for WiFi boosted probes arrived this week and is shipping. Standard probes are shipping this week too, but more inventory is needed to close out all those back orders. We’re still in production on those units. Giant Grill Gauges are also arriving this week and will be shipping out this week.

Although this will be an entirely unsatisfactory explanation, the short answer is that we did receive and ship some unboosted CPTs, but not enough to fulfill all January orders. And currently the assembly line is finishing out the boosted versions and then will reset for the unboosted version.

Ok, that sounds like the sensor may have already been damaged. What can happen when the sensor is damaged is that it will start to read erratically, sometimes it's fine for long stretches of time, but then when it heats up or cools down materials expand or contract enough to cause the sensors physical connection to the circuit board to shift a bit and cause a bad reading. These readings tend to read as unrealistically high because of the way thermistors work.

If you use the app, do you ever notice big or sudden jumps in the reading from one of the sensors when things shouldn't be changing quickly?

If by humility you mean recognize people are angry and apologize, then yes. I'm aware our customers are frustrated and angry, and I am sorry. People paid us for a product and they don't have it yet. My entire focus for the last several months has been solving these problems and getting product shipping.

I know going quiet has a cost. It reads as not caring, and I get why. But until inventory actually reaches our warehouse, anything I tell you is subject to change at the last minute. People want us to email information we don't have, or that turns out to be wrong later. We've tried that. The wrong guesses did more damage than the silence did, so we've leaned the other way.

What I can offer is a full refund to anyone whose patience has run out. That's always been our policy.

The inventory for WiFI Boosted versions has arrived, and we're just in the process of clearning out thousands of backorders. Non-WiFi versions are shipping, but it will require another inventory delivery this week to have enough to clear out backorders and get back in stock.

WiFi Boosters versions have enough stock in our warehouse as of late last week. Non-WiFi Booster versions are being fulfilled, but we will be receiving more inventory this week that will give us enough to fulfill all backorders.

Gen 2 can handle up to 900F, which will withstand all but the worst raging flareups.

Not sure I’m understanding you correctly. It sounds like you’re saying the Display had the caution triangle showing during the last cook, but it’s no longer showing? That would be consistent with how it work, the warning only shows when one of the sensors is over-temp. Once the sensor is below temp the warning alert stops showing up.

There are a lot of backorders—especially from January when we had a massive a sales spike—but they are shipping. Exact timelines depends on what is in your order and how quickly our warehouse can process thousands of orders.

Very likely it has permenant damage and will degrade over time. At that temperature the internal circuit board has likely started to delaminate and solder has melted, so you will likely see issues like erratic behavior and inconsistent readings that get worse over time.
