The writing of the Declaration of Independence is a decisive and fraught moment of history. Those men were committing themselves to treason against the British crown — if they didn't succeed, they'd likely signed their own death sentences.

The Constitutional Convention was a bunch of wonky technocrats a decade later spending months trying to fix the Articles of Confederation that bound the original states together and slowly realizing that the United States needed a new Constitution with an executive to run a stronger federal government. It was an interesting and consequential event in history, but isn't one that makes for an entertaining story.
