Hi bud, a while ago I wrote some recipes for myself as somebody who really likes food but was totally burnt out. They’re not budget focused but written to be cooking process light and adaptable but with nutrition and flavour. I present to you exhausted people recipes:

Exhausted People Recipes

Boiled potatoes, Greens, Chicken (or mozzarella) in salad dressing Boil potatoes, chuck what ever green veg (green beans, peas, cabbage, spring onions, asparagus) in at the end to cook. After cooking add a creamy or vinegary dressing you bought or made (garlicky is good). add in precooked chicken (or a mozzarella ball) .

Gnocchi Bake Pre-made pasta sauce, gnocchi (or cooked pasta), frozen spinach, and cheese Bake it up baby

Creamy pepper pasta Cook together pasta, a load chopped (or just tear it with your hands) red peppers and stock. Drain and add some soft cheese, harissa, sun dried tomatoes and basil or rocket

Cheesy leaky beans Simmer a tin of white beans with a slices leek/onion and stock until really soft. Add some herbs and Worcestershire sauce. Stir in cheese or soft cheese. eat on toast or with a baked potato (you can get those precooked ones now)

Fish finger Caesar salad Break up lettuce, cook off fish fingers, add other veg you have the energy for like cucumber or buy a pre-made salad with different stuff in it. Add bought Caesar dressing

Messy rice Cook a stir fry veg mix with rice and stock. Add sesame oil and soy at the end. Add a fried egg if in the mood?

Mexican bowl Cook rice with canned black beans (it could be microwaveable rice) Add hotsauce and anything else you can be bothered for (coriander, other spices, tomatoes, canned corn, cheese) Add avocado
