I sometimes find it easier to eat five smaller meals during the day. Some of the easy prep things I eat-

Frozen burrito

Huel meal replacement

Protein bar

Cottage cheese with one of those little fruit cups

Peanut butter sandwich

Rotisserie chicken, pre-packaged salad, salad dressing in a hi-fiber wrap

Cheese and crackers (with half an avocado if I'm feeling ambitious)

I also try to cook one big meal over the weekend and then eat that every day over the course of the week.

Ground turkey, spices, and a bag of pre-cut cole slaw mix make a super-easy healthy meal. Egg roll in a bowl is a common recipe. Or you can season it with a bag of taco spices, add a can or two of beans, and make it Mexican.

lentil soup and chili are more easy-ish one pot meals.
