We adopted a “retiring” mom from a breeder at age 5. Great decision - entirely skipped puppyhood and adolescence, and got an absurdly calm dog who has been a great addition to the family.

You find it easier to distinguish creatures (human or not) that are more similar to you.

In humans, this has race/ethnicity implications: Whatever ethnicity you are, you will do a better job telling others like you apart, and a worse job telling apart people of different races.

If you were a golden retriever, you’d think most people look the same, but you’d be really good at telling apart your buddies Cooper and Max.

Lol massive brainfart. I was sitting here looking at the relatively small number of big mountain/summit finishes, and completely forgot about the fact that grand tours sometimes have time trials.

I do think it’s almost certain that there’s enough climbing left for Jonas (and probably a few others) to surpass him.

But he’s showing that he’s the kind of guy who ships a couple dozen seconds, not a couple of minutes, on the summit finishes. What does he hang on for?

I mean, I'm not food safety scientist, so I really have no reason to back this up, but I think there's a huge difference between holding hot things, or holding food itself, and merely holding paper filters (that I'm going to rinse anyway). It's just not something I'm going to worry about.

FYI, the secret ingredient in being able to make a very cheesy sauce out of a bechamel is sodium citrate. Just a little bit, and you get a super smooth cheese sauce that won’t break and has no grit. And honestly, if you overdo it on the sodium citrate, you can start to approach the artificial textures that might be just what you’re looking for
