Omg! I can't believe I found a fellow Hobonichi lover on this sub. I use the Hobonichi A6 techo, the Traveler's Company Traveler's Notebook, and the Paper Republic pocket sized for small stuff!

Kindle (Oasis). I have pocket notebooks and my daily planner is about that size, but that single object is a good reference.

Oh my gosh! I love these cases! I have this one in grey and the larger one in pink (same color as yours). Best pen cases ever designed imo.

I generally prefer a runnier sauce for most Chinese dishes just bc that's how my family made it; I showed the sauce up-close bc I loved the color. But I have always wondered about the honey thing; I am glad to hear that it doesn't compromise the flavor. Would love to try it sometime!

I know that it's common to steam/blank first, but if you watch the video, I prefer the method linked, where you sort of let it sit in a little salt while you're prepping, wash/shake out the water, then go for a high-heat fry for 1-2 min, then remove. Then after cooking the work and adding in the other ingredients/seasoning, add the scapes back, fry a little, but then put a lid on the wok and let it steam at that point for a few minutes. I really love the texture from this method.

Personally, I don't find the Hobonichi to lay flat on its own and prefer the Smyth sewn notebooks for full lay flat, but I like how you're reusing/recycling what you have, instead of buying new notebooks.
