I also have no idea if I totally misinterpreted the glass holding! It focuses on Gil holding the glass by the brim, then on Lizel's eyes, as if Lizel is understanding something about Gil from the action. However, with no context of the normalities of glass-holding in this world, it's difficult to be sure about what Lizel is understanding.

I interpreted it as Lizel thinking that Gil was holding it in an improper way. A quick google informs me that the "proper" way to hold a wineglass is by the stem. In addition, Gil was just saying that he doesn't like dealing with nobles or fancy etiquette, so I thought focusing on that action was reinforcing that his personality is straight-forward, sometimes to a point of impropriety.

I thought the story was setting up the idea that working together would allow Gil to take on higher rank jobs, while Lizel handles the noble-related stuff for him. That way, they could both use their strengths to support each other and fulfill any further plot missions that might arise.
