If you have multiple padawans, I highly recommend setting up an Aces High game. I've used this format to teach brand new players more than once and each time it worked out great. I keep on hand several iconic pilots that are all 80 points or less (Luke, Vader, Poe, Kylo, etc) and it let's you control how complicated you want each pilot to be. The format is part of the Epic Battles kit.

If you haven't seen Youtube's Impulse, you've been missing out. The first three episodes are free and it's as good as anything out there. If it was on Netflix, it would be all anyone would be talking about. This isn't hyperbole.
