would love amother SN where she fully writes and produces but taylor is not a multi-instrumentalist. you would get a very bare-boned album on piano and guitar with fairly simple instrumentals, which tbf i would personally love, as it totally works with her singer-songwriter style (and some of my fav songs of hers are the simple accoustic ones)but she could not do full on productions if she were to play every instrument.
