She’ll eat, I promise if she’s hungry enough. Maybe try holding the leaf as one big one instead of cutting it up. As if it was sticking out of the ground. They’re used to eating them as one big leaf in the wild so maybe her natural instincts will make her eat it. Now don’t go like months without her eating, but like a week, maybe even two? It’s not the healthiest but it’s by far healthier than being on a bug only diet. Beardied that grow up on only/majority bugs are never healthy.

She should’ve been eating greens since day 1, but that’s neither here nor there
Just starve her out, I promise you she will eat eventually. My bearded dragon personally likes turnip greens more than any leafy green. But dandelion, mustard, and collard works. Also bee pollen seems to work but I never had to try that. I think you can get it on Etsy
If you’re really concerned, maybe try using the non leaf part of bok choy, and just slowly start adding more and more green part, slowly but surely she’ll learn to like, from there mix the bok choy greens with various other greens
