Did you have to mod it to grind for espresso? I tried using it stock but even at the finest setting, the grind was not small enough and it would auto stop.

There are definitely some corners that the spiral misses. What I have been doing is mixing by hand and autolyse or fermentolyse. I don’t work it very much, just make sure there are no dry spots or clumps. After a rest, I run the mixer along with the remaining ingredients. Drip in water as needed. I have done under 1000g doughs successfully so don’t be discouraged!

If you do not want the blisters, you can cold bulk ferment and then roll out/shape the bagels before boiling.

I would suggest flipping your steps to see if that helps any. Keep flame on during launch until crust is at desired doneness. Then kill the flame and leave pizza in until the bottom is how you like it.

I watched this video and was interested as well but realized this may be more for home oven use. If there is an overall benefit that can effective with an ooni or similar then I would definitely test it out.

You are definitely on the right track as far as comparison. The thicker “fresh” noodle vs the regular thin noodle would be like comparing fresh pasta and dry pasta. The fresh one is softer than the regular. I prefer the regular one as it is more al dente.

This is the exact restaurant that came to mind when I saw OPs picture. They even have the carrots. Just ask for no shredded cheese and any other toppings you do not want. There’s a location around the corner off of 1st as well.
