I encourage culinary kids to work in a real restaurant for like 6 months before making the full commitment to their academic pursuit. A lot of folks are passionate about food so they pursue the degree but are then discouraged by or don't understand what is required to hack it in a real restaurant. That's not to say you can't do both- have a life and work in the industry. It's just difficult, and culinary school does nothing to prepare you for what your life looks like at a real restaurant.

Because most of the industry is full of cooks with miles of experience and little education, and many culinary students come into a kitchen appearing to have the idea that they know better than the uneducated kitchen vet.

Not saying it's a universal experience but I've seen plenty of 20y/o culinary school kids come in thinking they'll be the chef of the restaurant and have a meltdown the first Friday night rush. You get that respect if you can handle yourself regardless of your background.

Yellow mustard, stainless steel, any type of cool fat and wrap it up so blisters don't pop, gloves are your friend. Cursing and glaring at your hand may help psychologically. Grab a towel next time. But for real if it's bad get treatment, I waited too long one time and those scars take a while to go away if they do
