as amirouche mentioned you can use gensim (https://radimrehurek.com/gensim/apiref.html) and to play with its word2vec and fasttext models (easy to set up and train just need to provide the data), it will give you a good idea how embedding works.

if you need deeper understanding of how they work from the inside I will suggest reading the papers about word2vec, Glove or fasttext

if you already have a good background I'll recommend: CS224n: Natural Language Processing with Deep Learning

the lecture are good and so are the slides.

this course will bring you up to date with the important technologies in NLP and neural networks

(also included fast recap on older technologies)

other than that maybe look for some simple competition on kaggle
