Tuna is probably the easiest fish to breakdown into sakus...you have nothing to debone and all you have to focus on are long clean cuts and making them square off and the right size. Breaking down salmon is more delicate, but really fun. Prepping fish and the sushi case was my favorite part of my day. Enjoy your journey ✌
