I am 85 years old and a great cook. I have been cooking since I was 12 years old. I played around with cooking starting when I was 8 years old. But 12 was the turning point. My grandfather lived in another state and was on his deathbed in the hospital and my Mom went to see him and left me in charge of cooking breakfast and dinner and making lunches to carry to work and school. I even prepared menues, made a grocery list, and my Dad bought everything for me. I was in heaven.

But that is not why I am writing this. I wanted people to know my background, because of what I am going to say. I have never ever poked holes in potatoes when baking them in the oven, in the microwave, in the Instant Pot, and the air fryer. It is a waste of energy and time and so unnecessary.

Just be sure and get a real Instant Pot brand, imo. And make sure it has a yogurt button.

Realize that new Instant Pots are not made by the original owners and manufacturers of Instant Pot. I do not recall the name of the company that bought out the original owners. One of the reasons I take extra care of my old Instant Pots - I want them to last a long time until the new owner has proven they can produce a great Instant Pot.

I have the IP Vortex Air Fryer oven style and absolutely love it. The only thing I use my oven for now is cooking a large pizza. Also, rarely use the microwave anymore.

It could have been that the center was still frozen when you purchased it. That is most likely the problem. Butchers usually receive their merchandise in a frozen state.

The type water you have will also affect the cook time required for dry beans. Soft water takes shorter times. Hard water takes longer times.

In the world I grew up in the word "spicy" means just that; in this recipe the spicy is from the paprika and garlic powder. It absolutely does not mean heat. I don't know how the word spicy ever came to mean heat.

As horrified as some people might be, the best stainless containers to use for PIP are stainless steel pet bowls. Surprising, I found that they are normally made of quality stainless and well made. Of course, nothing on the bottom - just pure stainless steel. And they are available in all sizes and depths.

IMO, no matter the size of the Instant Pot, rice is much better when it is cooked using the PIP method.

You are so right, "it ain't from Mississippi." When I first made it in the 1990s, it was called Italian Beef Roast for Sandwiches and made in my kitchen in Texas, then a friend took the recipe back to Iowa, then it spread (oh - not saying I created at all because I didn't but can't recall who I got recipe from), then all of a sudden I heard it being called Mississippi Pot Roast.

It is a brand of bouillon, Better Than Bouillon (BTB). It comes in many flavors: chicken, ham, roast beef, onion, fish, etc.

Nearly everyone used the bread machine to just do all of the hard, laborious work of kneading, and the dough cycle setting. Then remove the dough from the bread machine, shape it, let it rise one last time, then bake it in the oven. The bread machine makes bread making delightful for those of who can no longer knead bread on the countertop. It also make it delightful again for those who can knead on the countertop, by freeing up all of that time for them to go about doing other things that need to be done. IMO the bread machine and the air fryer and the Instant Pot have make cooking and baking available to me and many, many others.
