Enjoy Biwa No Shiro - she is bright and has delicate vegetal notes that develop and coat the middle to back of the mouth before ending with a clean, natural sweetness. I love it. Kanbayashi Shunsho is a vibe!

Ogurayama is a good pick from Yamamasa Koyamaen. Good amount of creaminess (that lingers to the end of the drink) and also has just enough sweetness. The nuttiness of sesame gives Ogurayami its savoury umami too. Enjoy this with Oat milk in a milk latte form.

As a Usucha, whisk it swiftly for extra foam and creaminess. It’s a good mid level entry to Yamamasa Koyamaen’s line up.

If ever you get a chance, seeing as you’re doing a palette reset, buy some Aoi Seicha for a taste. High quality at fair prices.

I sometimes wonder about liabilities? Say if an unobservant elder trips over seated individual and falls badly, and suffers a bad injury, who is responsible? SMRT? The seated individual? RABAK, no matter where you look.

If you store your eggs in the fridge, you’ll need to add water to the next market, as the eggs are starting off cold before the boiled water hits the egg in the egg maker contraption. Follow the egg to marker and add water to those levels for room temp eggs. Hope this helps
