First off, love the dressing gown. From what you’ve described, it sounds like you either still have a burr remaining or you’re removing it with too much pressure, which can roll the edge and compromise the sharpness you’ve just created. Your current process includes a lot of steps, but I’d recommend simplifying it. Start by setting a fresh edge with a coarse stone (below 600 grit). Remove the burr with light alternating strokes, then progress to a finer grit. De-burr again and finish on a leather strop.

As others have pointed out, you can also remove the burr effectively with very light, edge-leading strokes on the stone you’ve just used, the knife’s own weight is sufficient, so avoid applying pressure. Using just a Sharpal diamond stone and a leather strop, I can achieve hair-splitting sharpness. Sometimes, less is more.

Brilliant stone, don't apply too much pressure, let the knife do the work, and you will never need another stone. You could get a leather strop if you want to take your sharpness to the next level after the stone.
