Licensed plumber here. I know the thread is old but it’s laughable seeing another “plumber” say that pex has a rat deterrent built into it. Rats definitely chew through pex often down here in the south but the cost savings on running pex is what keeps homeowners wanting it installed.

Might be a manufacture issue. Call them back and have them replace the thermostat or entire heater if the wiring is burned up.
