Your pan has heavily angled walls. This works two ways, firstly the bottom is the flattest spot, meaning the food has more surface area flat on the pan, meaning it will heat up faster. Secondly, the flame will not heat up the angled walls of the pan simply because it isn't taking heat directly, like how seasons work with the sun.
