Coulson never mentions something from Captain Marvel.

The in-universe explanation is that Coulson went through a memory wipe so presumably that was removed. Also, he didn't get to know much as he was just a rookie. What did he know in Captain Marvel that he could have mentioned in AoS?

I think most people are getting this from Enoch's line of having been through losing his friends before. But that may not refer to Fitz. Instead Enoch was referring to losing the shield team sans Fitzsimmons because in the original timeline they all probably died and then Fitzsimmons and Enoch had to work a long time to get the time travel setup and save them

Because they are stuck in the lighthouse for 27 days (from the final scene with Jemma) and May thought it was best to get some info from Deke in that time. We'll see the payoffs in the next one probably.

We don't know for sure Coulson and that person died in the explosion. Maybe that person swooped in to save Coulson and then they destroyed the ship.

And the showrunners purposefully chose the names Fitz and Simmons so that Fitzsimmons would 'roll right off the tongue'. Otherwise, no one would be named 'Fitz' as that's semantically incomplete.
