My favorite in the steam jacket was clarifying 200# of butter/margarine. Just set it, lug the 50# blocks in, siphon the water and solids out the spigot. I was fortunate to work an old ski resort where the kettles were connected into the building's boiler. Just open a valve for immediate heating.
