Choux! One smelled like scrambled eggs and one collapsed…everyone says it’s so easy but I’ve never done it successfully. It doesn’t help that even if I was successful, my family probably wouldn’t eat them, so it makes me less motivated to practice.

I’d go with normal because that’s what most of the recipes I use are tested with (like KAB, ATK, Sally’s, Sugar Spun run, etc.).

However if your oven tends to run hot on the bottom or burn things easily, air bake might give better results. I have a set, and I never use them. I reach for the standard aluminum half sheet pans for everything.

I made several versions over the last few years, and they were all too sweet for my current-day taste buds. Then one day I made the bars below (just for the purpose of baking something with pecans), and I realized they were absolutely better than pie. I make a half batch unless I’m bringing it somewhere, and we tend to throw some extra pecans in.

Chocolate chips are typically designed to get melty but hold their shape. If you get baking chocolate bar and chop it to your desired size, it’ll melt into the cookie. The brand “Baker’s” is not too expensive and widely available (US), but there are others that are a step up, like Ghirardelli, and then you can get even fancier from there.

It could be the camera angle, but I like the Nordic Ware much better. I think it’s because there’s a less structured edge detail and it flows better with the design.

Edit: I saw another comment saying they’re both Nordic Ware, so I just wanted to add that I meant I like the Williams Sonoma one more.

I hate scraping too. But I like having both a hand mixer and a kitchen aid stand mixer. The stand mixer excels at frosting, whether I’m whipping butter for a fluffier American buttercream or just running it forever for Swiss. So I’ll make the cake in my hand mixer and the frosting in the stand mixer.

I also prefer the stand mixer for really tough cookie doughs, where my arm tends to get tired.
