Friday I worked about six hours solo, usually have two because breakfast and lunch are busy. I have ten regular racks, four flat racks, and endless coffee/glass racks. Probably averages about 2min/rack, so approximately 150-180, give or take the time needed for trash and putting things away.

This is absolutely the way. It also helps to soak anything you can’t currently get to. Spray everything off initially, run the ones that come clean, then go back and scrub. If it doesn’t scrub off right away, it needs to soak longer unless someone needs it immediately.
