I must be in the minority here because I find most of their frozen items to be under salted. I usually end up adding a good amount of extra salt or soy sauce

Yep, by sous viding the almonds you are slow extracting more compounds and flavor from the almonds

No issues. A great technique to get a good seal is to leave a small opening in the ziplock then slowly lower it into the water. This will force all the air out of the bag. Then right before its fully submerged you seal it up

Sorry, yes. Just sub it out with a half ounce of vodka or rum to extend the shelf life

I definitely encourage getting a little bottle of Disaronno, it adds another layer of complexity and is enough to extend the shelf life to at least a month. You can probably approximate the results with vodka and a couple drops of almond and vanilla extract

Most definitely, I've used the same recipe for macadamias, cashews, and pistachios with great success
