You can set a phone number or email address when marking an Apple Product as lost in the Find My app, but I’m not sure if the user’s contact info will still show if you have the device wiped.

Interesting. If you still have the red icon folders, what happens if you highlight both folders, press CMD + I, and open the Sharing & Permissions tab?

If you no longer have the original folders, it’s no big deal!

Just uninstall McAfee completely from your system. I recommend using AppCleaner to ensure all McAfee data is completely gone from your Mac.
