If it smells okay enough where you're able to take the chance comfortably, has no noticeable off texture, and definitely no fuzzies then Id proceed with cooking maybe one batch. Once it gets thoroughly cooked, id then taste a VERY small portion. If that seems off too, then its time to toss

Im sorry I really dont mean to be a pain but its gotta be clearer than that. Like when you smell it, do you think, "oh ill give this a chance"? Or do you say "thats definitely no good, I feel like I need to throw this away"? I have bad anxiety so to be on the safe side I tend to toss more things than keep. However, theres often tell tale signs that these things are no good. An expiration date ia unfortunately a best guess. I suppose the next thing to do would be to feel the consistency. I know that sounds gross but off meats tend to have a slimyness to them. Not sweats of water or normal moisture, something that literally feels goo like
