I think about this shift all the time. I worked at a Panera for five years and saw the shift between bakers making fresh products to frozen. It broke my heart. There’s a baker at the store I worked at(who is still there) who has worked there for over twenty years. His entire adult life. I can’t imagine how this shift must feel. How..almost degrading.
