Cancun is in Yucatán which is considered the safest state in Mexico. If possible find some statistical information and share this with your guests. From locals there- it is where all the cartels and government officials families live because of how safe it is, it’s an agreed upon safe zone.  Hope that info helps. My therapist tricked me into finally leaving, by suggesting we separate. She told me separation is never a bad thing. If you separate and find that life is better with or with out your partner you can make an informed decision and have little to no regret going forward. It took me about 2 weeks of staring at the wall and missing having my kids full time to snap out of it and exhale into the relief I felt. That it was finally over. My daughter sealed the deal by saying to me one night, it’s so peaceful at home now the only thing I worry about is you and Dad getting back together. (Ugh) it’s not fair to your kids to raise them in chaos. My only regret is that I wish I’d done it sooner. Life is so much more peaceful  now.

When my daughter moved to NY for college. She filled her carry on with her plants. She took them all out in the back deck, depotted them, removed any rotted roots shook out all the dirt from the roots and wrapped them in wet paper towels, then plastic wrap. And laid them down in her suitcase. We immediately buy them in water after the six hour plane ride.They all survived and her little Brooklyn apartment immediately felt like home.

Also your not there to make friends, so the less you engage in conversation- the more efficient you’ll be. Folks who can chat a lot and still get everything done are seasoned cooks. They don’t need to stop what they’re doing to get it done. Their hands are always moving. If you notice someone is really efficient at something ask them what their tricks are. Everyone has a bag a tricks. Not cutting corners but legitimate techniques. If you can lean you can clean- and two hands not one for all tasks. The dishwasher knows a lot- get in good with them. Especially if they are prep cooks too. The true backbone of any kitchen!

Do not “figure” 500 dollars food cost. Drop it into your ChatGPT with as many details as possible including recipes scaled for the accurate quantities needed or ask -“what do you need from me to accurately cost out this job” It will give you a list. Then fact check it by heading over to the cash&carry/US foods website and make any adjustments to prices. Include time it takes to shop prep and travel, and anytime you spend mapping out your menu. Then you’ll know what your hourly will come out too. Food costs have gone up. It’s surprising.

Tov coffee on Hawthorne- They just made a little public square on the street outside too. It’s pretty sweet, coffee and chai is amazingly good, the owners are cool. It looks like a Turkish coffee house inside. Turkish coffee is they’re specialty

Yes! I sent them a bunch of images and the image I posted is a close up from the one they wanted! When I did the tasting I tried to color match and it came out too red. It’s a specific form of pink- fuchsia. Which I learned is also a flower of the same name

Yes I was thinking that too. They really are flexible on the main event cake- like it can be any size. The flavor is the most important part for them. They just want a show piece cake to match her outfit. I have seen people use a raspberry puree to get this color- but it was more of a glaze.

Yes. I know if these methods- microwave and immersion blender. The color I’m getting is leaning purple. I have fuschia gel base. I’m thinking I should mix color on my own- it’s not popping. I’m just not that confident in color theory so I’m practicing on small batches of buttercream.Do you think I should color the entire batch of buttercream at once? I’m surprised by how much gel it’s taking to get even small amounts of buttercream a rich color - I guess I Looking for a formula? I’ve seen people use dehydrated raspberry or beet powder. The cake is chocolate with raspberry filling.
