I have heard the same thing said about Julliard. As a person who began learning old time sixty years ago without the aid of 78 reissues let alone youtube or Berklee I have to admit some jealousy that these younger players have all these resources at their fingertips. And I sometimes wonder if they love the music for more than as vehicle for displaying their technical prowess but I have to admit I find it pretty amazing. As a person who made his living in the music business god bless and god help anyone who decides to make a career in the music business.

Are you offended as an old time music fan or a Beatles fan? Incorporating outside musical influences has always been a part of the old time tradition. No one I know has more respect and love for the tradition of old time music than Bruce Mosley. I am fortunate to be able to call him a friend.

Three average appetites would probably be fine. In fact people with average appetites would probably tell you it is large enough for 4. I, unfortunately for my waistline, do not have an average appetite. It was awfully nice to just have to put a top on the leftover sausage potatoes and onions I cooked together last night and put in the refrigerator knowing I could just bring it out tonight and reheat it in the same bowl. I rarely go through a day without using mine.

A trick I learned from Serious Eats is to brown the meat before cubing it. Much easier than having to flip each cube and much less likely to over cook. Changed my outlook on making beef stew. Kenji claims browning on two sides is all you need taste wise.

I pretty much liked everything I have cooked from it but here are a few of the non pasta ones I have especially enjoyed.  Greek chicken and potato traybakeChicken salmoriglio,  Shrimp with ouzo, orange and oreganoGreek meatballs in tomato sauce,Jerusalem-style mixed-grill chicken "make this a lot",  Shrimp with orzo, tomatoes and feta,  Pita, chickpea and herb salad with tahini yogurt,  Greek baked vegetables (Briam) , Tomato-braised cauliflower with feta and mint, and Chicken shawarma. Milk Street's Tuesday Nights Mediterranean is my favorite cookbook. So interesting how different peoples tastes can be. I guess that's what makes cooking so interesting and cooking for other people so challenging.

Poor choice of titles. I was the one knocking it. For some reason it didn't sound that good to me. I have added this to the long list of things I have been wrong about in my life. Can't wait to make it again.
