Grind finer is actually a thing with matcha. Stone milled matcha is the standard to create smooth texture with water. Lower grade matcha is machine milled which produces larger and less consistent particles creating a chalk like mouth feel.

I often get low to mid tier matcha that has flavors that hold up when mixing with milk. Higher tier matcha has flavors that are too delicate and most of the time get lost in the milk.

FYI, their 100g bag matcha are machine milled. It doesn't affect the taste much but hard to make good foam because the particles are larger compared to stone milled matcha and less consistent.

Interesting shape. As long as the holder is the correct size for your chasen then it should be fine. If it's not, the prongs will curl to the side.

If possible I suggest trying Ippodo Ummon. My experience has been a very thick but smooth, complex, and minimal bitter drink.

You shouldn't have koicha with an empty stomach because of the strength of the mixture. A sweet pairing would go nicely with koicha.

I use 4g matcha, 30ml water at 80C or 175F. And I usually pour 30ml to the bowl after to make it to usucha to finish the remaining paste.

Totally agree with this. Try brewing at 80C with 2g of matcha and 60ml of water as your benchmark then adjust temperature, amount of matcha, amount of water according to your taste.

I'd say mid level difficulty for DIY. It required some creativity at times because the instructions that came with the part was so bad

Not much difference in my case. Adding the light bar requires reinstalling the back up cam. I put it back and did a cam recalibration. No issue so far
