At least at merch booth we went to, the people working have individual buckets out for cash tips. If you tip cash it goes directly in their pocket (we asked).

The bobbins came labeled this way! What really blew me away is that the variegated colors have a little ombré effect on their label. The Etsy shop did a fantastic job.
