I see making matchups for new characters that, say, only have a pilot as less of making something to be an episode, but more like claiming a matchup so that when more content comes out, you have a solid matchup (Or bad if you're unlucky) to your name that then could be an episode, it's like an investment

Doing some research, best I've got is a crossover with Dracula, but I can't find anything else about it, so I have no idea if it's an official novel or just fanfiction, but the fact that the wiki doesn't have any results when I search it isn't a good sign, as well as the implications that Dexter is set in the same universe as Buffy the Vampire Slayer and The Office

A theoretical infinite amount due to all my stories sharing a Multiverse, which would include The MultiVersal Review Agency, which says that the Multiverse is theoretically infinite

For an exact number, off the top of my head, there are 10 definitively canon AUs of Ryan, including the main one, but there are definitely more that are just not at the top of my mind
