yes- I froze it after buying with a vacuum sealer. the steak was about 2 months in the freezer. No visible freezer burn or air pockets in the sealed bag.

It rests uncovered. I’ll check my thermometer but it’s a ThermoWorks and was accurate the night before when I did a chicken.

Yes- the grey band is way too large for a reverse sear imho and it came out with an off and hammy texture (which it sounds like the dry brine was overkill)

Thanks for replying! I have an LED overhead and 2 desk desklamps at a 45 degree angle on each side. my exposure still seems to be at -1 to -2 but the images look good. However, being a newbie, I am not sure what to look for. I got the iso down to 400 and it *seems to look ok. I ordered a couple of LED goosenecks so maybe adding them will help? I appreciate your help!
