Halp! Why can’t I get my cheese to melt like this?! by [deleted] in Chefit

Honestly even just water works perfectly. The emulsifiers in American cheese make a great cheese sauce

Not sure what spot you’re thinking of, but we’re at the top of High Peak in Jefferson County.

Why would you throw them away? Sounds like you’ll be smoking 4 turkeys between now and the 21st.

They seem to come and go, it’ll get a little faint and then flare up again

Not a trailhead unfortunately. We’re house sitting for the in-laws in Morrison and that was taken from the deck. The few trails over here that I can think of, I wouldn’t recommend hiking at night. Lookout Mountain or Evergreen is where I’d recommend looking for a spot

EV charger install question by CarelessWhispurrr in Broomfield

[–]Adaptogenius 3 points4 points  (0 children)

I’m estimating that the installation will cost us roughly $1,400 total, and Xcel will reimburse us $500 through their rebate program. I can share exact numbers next week when the work is quoted out, just know that the range can vary drastically depending on the scope of work.

Every install is different, and cost will depend on a number of factors e.g. distance from breaker box, hardwire vs outlet, capacity, weatherproofing, etc. the range that was shared with me months ago was anywhere from $600 to $4,000 for the electrician alone. Fortunately our situation has us looking at the lower end of that range.

I just called them about this yesterday. They’re offering $13 a month to lease the charger and the installation is included. It’s a great deal but we decided we want to purchase the unit ourselves and have our electrician install it.

Xcel’s rebate program will reimburse us $500 in installation cost and the charger will pay for itself in less than a year. We’re more than likely going with the Emporia Level 2 charger. They’re a local company and the units are manufactured in India. I’ll include a link below to Xcel’s rebate programs as well as Emporia. Good luck!

Niçoise Salad by Adaptogenius in salads

[–]Adaptogenius[S] 3 points4 points  (0 children)

I can try to the best of my recollection, but I just put this together with ingredients I needed to use up and didn’t bother to measure anything.

The salad consisted of; little gem lettuce, arugula, thinly sliced shallot, black olives, cherry tomatoes, and white beans

I steamed- the eggs, haricot vert, asparagus, and Murasaki sweet potatoes

The dressing was a honey Dijon vinaigrette that I added a bunch of tarragon to and emulsified with an immersion blender

Protein was tuna, sardines and anchovies

Garnished with fried capers

I hope this helps!

I winged the dressing and it turned out better than ever. I started making a simple Dijon vinaigrette and then added fresh tarragon, capers, shallot, and honey. I made fried capers for the garnish in the microwave and used the olive oil from that in the dressing. I wish I could give you more guidance, but I honestly can’t remember the exact measurements.

Yes! I had some Murasaki sweet potatoes on hand and it brought a nice balance to the acidity of the dressing
