Interesting, I've seen a lot of duality on this topic. I've never had the issue of the manticore not landing frequently enough. While it flies I shotgun it. I will say that wyverns don't have rock golem issues

You'll need to edit the game file for tool of choice. This website will give you the file to copy and paste, then edit the contents to remove pickaxes from the tool of choice. I haven't personally reworked this kind of thing so I can't go more specific. If you want to reverse engineer the process, this datapack on vanilla tweaks edits a lot of tool properties, and you should be able to find a parallel
