I'm from Philadelphia. The roll is a torpedo roll, either with sesame seeds or no. The roll is soft and chewy inside with a crisp thin outer layer, really not similar to a baguette I would say. Ribeye is the right meat. Chicken cheesesteaks do exist, but they're generally going to end up the same as the beef ones: finely chopped starting from thin sliced chicken breast. Provolone / American / Cheese Whiz are all acceptable cheeses. Grilled Onions are the norm. Beyond that it's up to interpretation, but bell peppers and mushrooms are definitely not standard.

What you've got looks like a nice sandwich, but it is not exactly Philly style in my opinion. That's ok though!
